🌮 Chicken Fajitas
Ingredients
For the chicken & marinade:
- 500g boneless chicken (breast or thighs), sliced into strips
- 2 tbsp oil
- Juice of 1 lime
- 2 cloves garlic (minced)
- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp salt
- ½ tsp black pepper
For the veggies:
- 1 onion (sliced)
- 1–2 bell peppers (any color, sliced)
To serve:
- Tortillas (flour or corn)
- Sour cream or yogurt
- Salsa
- Grated cheese (optional)
Instructions
1. Marinate
- Mix chicken with oil, lime juice, garlic, and spices.
- Let it sit for at least 10–15 minutes (longer = better flavor).
2. Cook the chicken
- Heat a pan (or cast iron skillet) on high heat.
- Cook chicken for 5–7 minutes until browned and cooked through.
- Remove and set aside.
3. Cook the veggies
- In the same pan, add a little oil if needed.
- Toss in onions and peppers.
- Cook on high heat until slightly charred but still crisp (about 4–5 minutes).
4. Combine
- Return chicken to the pan.
- Toss everything together for 1–2 minutes.
