Comforting Chicken & Noodles Crock Pot
Ingredients
- 1½ lbs boneless skinless chicken breasts or thighs
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 cans cream of chicken soup
- 1 tsp dried parsley
- 1 tsp dried thyme
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- 2 cups frozen mixed vegetables (optional)
- 12 oz frozen egg noodles
- ½ cup heavy cream or milk
- 2 tbsp butter
Instructions
1. Add to Crock Pot
Place in the slow cooker:
- Chicken
- Onion
- Garlic
- Chicken broth
- Cream of chicken soup
- Parsley
- Thyme
- Salt and pepper
2. Slow Cook
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
3. Shred the Chicken
- Remove chicken and shred with forks.
- Return shredded chicken to the crock pot.
4. Add Noodles
- Stir in frozen egg noodles and mixed vegetables if using.
- Cook on HIGH for 30–45 minutes until noodles are tender.
5. Finish Creamy
- Stir in butter and heavy cream.
- Let sit 5 minutes before serving.
Optional Add-Ins
- Mushrooms
- Celery
- Fresh parsley
- Parmesan cheese
- Crushed crackers on top
Tips
- Chicken thighs give a richer flavor and stay extra tender.
- If the mixture becomes too thick, add more warm broth.
- Homemade egg noodles make it even more comforting.
Serve with warm biscuits or crusty bread for a cozy meal.
