- 1 ½ cups shredded mozzarella
- 2 tablespoons cream cheese
- ¾ cup almond flour
- 1 egg
- ½ teaspoon baking powder
- Pinch of salt
Filling:
- ½ cup pizza sauce (look for low-carb / no added sugar)
- ½–1 cup shredded mozzarella
- Pepperoni slices (or cooked chicken / veggies)
- Italian seasoning or oregano

- Melted butter + garlic
- Grated parmesan
- Fresh basil

- Make the dough
Melt mozzarella + cream cheese together (microwave in 20–30 sec bursts, stirring).
Mix in almond flour, egg, baking powder, and salt until a dough forms. - Shape it out
Place dough between parchment and roll into a large circle (like a pizza base). - Cut & fill
Slice into triangles (like cutting a pizza).
Add a small spoon of sauce, cheese, and toppings at the wide end of each triangle. - Form the ring
Roll each triangle inward (like mini croissants) and arrange in a circle/ring shape. - Air fry or bake
- Air fryer: 180°C (350°F) for 10–12 minutes
- Oven: 190°C (375°F) for 12–15 minutes

Brush with garlic butter and sprinkle parmesan + herbs.
