🧾 Ingredients
- 2 tbsp butter or oil
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 2 carrots (sliced)
- 2 celery stalks (chopped)
- 6 cups chicken broth
- 1 cup cooked shredded chicken
- ½–1 cup uncooked rice (or 2 cups cooked rice)
- 1 packet ranch seasoning (or homemade mix)
- 1 cup milk or cream
- ½ cup shredded cheddar cheese (optional but great)
- Salt & black pepper to taste
- Fresh parsley (optional, for garnish)

1. Build the base
Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–7 minutes until softened. Stir in garlic and cook another 30 seconds.
2. Add broth & rice
Pour in chicken broth and add ranch seasoning.
- If using uncooked rice, add it now and simmer 15–20 minutes until tender.
- If using cooked rice, wait and add it later.
3. Add chicken
Stir in shredded chicken and let everything simmer together for 5–10 minutes.
4. Make it creamy
Lower heat and add milk or cream. Stir gently—don’t boil after adding dairy.
5. Finish
Add cheese (if using) and stir until melted. Add cooked rice if you didn’t earlier. Taste and adjust salt/pepper.

- Rotisserie chicken works perfectly for this.
- Want it thicker? Mix 1 tbsp flour with a little water and stir it in.
- For extra ranch flavor, add a bit of dried dill or parsley.
- Brown rice works too—just cook it longer separately.
